Progettare per la ristorazione.Designing for restaurants.
Flussi di lavoro, cucina dimensionata sui coperti, spazi di servizio, luce e atmosfera pensati prima dell'arredo. Tre locali fatti in Sicilia, e i principi che seguiamo.Workflows, a kitchen sized on the covers, service spaces, light and atmosphere thought out before the furniture. Three venues made in Sicily, and the principles we follow.
Per chi fa ristorazioneFor those in food service
How many covers can this kitchen handle? Where does the dirty flow go? How many people do I need per shift?" These are the questions of anyone opening or renewing a venue, and they are solved in plan, not on the floor once open. Here you find how we work, with three venues made in Sicily and the principles we apply before choosing a chair.
I principi della ristorazioneFood service principles
Un locale funziona A venue works se il retro lavora meglio della sala.when the back works better than the front.
Six rules that hold for a seventy-square-metre osteria as for a four-hundred-and-fifty-square-metre restaurant: we have verified them in every venue we have designed.
01
I flussiFlowsprima delle paretibefore the walls
Goods coming in, dishes going out, dirty returning, staff, customers: five routes that must not cross. They are drawn first, and decide where kitchen, washing, till and toilets go.
02
Sporco e pulitoDirty and cleannon si incontrano mainever meet
The plate coming back does not cross the pass the ready one leaves from. One entrance for deliveries, one way out for waste, a washing area with its own door: it is hygiene, it is speed, and it is what the inspection asks for.
03
La cucinaThe kitchendimensionata sui copertisized on the covers
There is no right kitchen in the abstract: there is the right one for the menu, the covers per shift and the way of serving. A line too short keeps the floor waiting, one too long pays for staff you do not need.
04
Pass, back office, washing, cold room, store, changing room: they are a third of the venue and decide whether service flows. They are carved out before counting the tables, not from what is left over.
05
La luceLightfa l'atmosfera e il contomakes the atmosphere and the bill
Low and warm on the tables, brighter where people work, diffused where they wait: light decides how long guests stay and how much they order. By day and by night the venue must change without moving a lamp.
06
Il magazzinoThe storee le consegneand the deliveries
Secco, fresco, surgelato, bevande, pulizia: cinque stoccaggi diversi, vicini a chi li usa e lontani dai clienti. Dry, fresh, frozen, drinks, cleaning: five different stores, close to whoever uses them and far from the customers. An eleven o'clock delivery must not cross the laid dining room.
Aperto nel 2026.Two hundred square metres for a contemporary diner. The problem: serving fast without losing quality, and being able to reopen the same venue elsewhere. The solution: steel in continuous surfaces for counters and furniture, red in the grid ceiling carrying light and systems, thresholds and transparencies between dining room and kitchen so the work stays visible, and built-in graphics that guide customers and repeat in every opening. Opened in 2026.
La Brace, quattrocentocinquanta metri fra gli archi.four hundred and fifty metres among the arches.
Aperto nel 2020.An old garage near the port of Palermo. The problem: a huge room to make feel intimate, and a service that has to cover the whole depth of the shed. The solution: seating along the perimeter and islands in the middle, wide passages for service, the black iron arches becoming buvettes and worktops, sound-absorbing panels in the rhythm of the arches so that you can hear each other when the place is full. Opened in 2020.
Biga, ottantacinque metri che chiedono precisione.eighty-five metres that demand precision.
Aperto nel 2021.A bakery with a visible workshop behind the Politeama. The problem: in eighty-five square metres, sales, waiting, production and service have to fit without getting in each other's way at peak hours. The solution: a counter that guides the step, furniture aligned with the pillars, routes that stay clear, grazing light on the surfaces and focused on the counter; by night the venue reads from the street like a low lantern. Opened in 2021.

The people who run the osteria in the Vucciria market tell of seventy square metres split into two zones, dining and service, and the doors that open onto the market.
The people who run La Brace tell of a garage near the port turned restaurant: the iron arches, the islands in the middle, a service that covers the whole depth of the room.
Prima della sedia, Before the chair, i numeri del servizio.the service's numbers.
We do not start from style but from the menu and the covers: from there come the kitchen, the flows, the people needed per shift and the light. The rest we tell at the studio, with the projects in front of you.
01
How many dishes, with what preparation, how many covers per shift and over how many hours: it is the figure that sizes the line, the cold room and the washing. Before this, drawing a kitchen is guesswork.
02
I flussiThe flowsprovati in piantatested in plan
Deliveries, waste, dishes going out and coming back, staff, customers, toilets: we draw them and measure them in steps, looking for the crossings and bottlenecks before a Saturday night service finds them.
03
Every extra metre between pass and tables costs steps, and steps cost staff. We check how many are really needed to cover the floor, and shorten the venue where we can: it is the item that weighs most on the operating account.
Where the goods come in, where they stay and for how long, where the waste goes out and at what time: dry, fresh, frozen, drinks and cleaning each have their place, close to whoever uses them, never on the floor.
05
Rumore, ariaNoise, aire comfortand comfort
A full venue is noisy and hot: sound-absorbing panels, kitchen extraction, air on the floor and low light on the tables are decided together, so that whoever is seated stays and whoever works does not suffer.
06
A three-dimensional model and renders with the real tables, the real equipment and the staff routes: you see what works while moving it costs a line, not a demolition. Then we build.
Il budget, prima del progettoThe budget, before the design
Quanto costa? How much does it cost? You know before a single line is drawn.
We do not publish prices per square metre: an osteria, a bakery and a four-hundred-metre restaurant are three different stories. We do something more useful.
01
At the studio or on the premises, with the floor plan and the menu: you tell us what you serve, to whom and how many covers you want, we tell you what can be done. It is how we get to know each other, before any commitment.
02
What it costs to build the venue you have in mind and how long it takes, in black and white, with a check of the premises, the flows and the kitchen really needed for your covers.
03
Un costoA feeche torna indietrothat comes back to you
The feasibility study has a fee, agreed together. If you go ahead with the design it is deducted in full from the proposal: not an extra expense, an advance on the work.
The unexpected can happen, but it is small: from the average of more than 290 completed projects, around 3% of the budget in non-historic buildings and 5% in old ones. If design starts after demolition is done, it drops to zero.

Domande frequentiFrequently asked
Le domande di chi apre o rinnova un localeThe questions of those opening or renewing a venue
Quanto costa progettare un ristorante? How much does it cost to design a restaurant?
It depends on the premises, the menu and the covers: that is why we do not publish prices per square metre. We tell you before drawing: after the first meeting, a feasibility study gives the construction cost of the venue you have in mind. It has a fee agreed together, deducted from the proposal if you go ahead.
How many covers can I do with my kitchen?
The menu decides it before the square metres: dishes, preparations, serving times and hours of service. From there the line, cold room and washing are sized, and you see whether the floor holds the covers you want or whether menu, kitchen or number of tables should change. We check it in the feasibility study.
Posso restare aperto durante i lavori? Can I stay open during the works?
For a renewal of the dining room, yes, in zones and with scheduled working hours. If kitchen, systems or toilets are touched, no: it is done in a single block, and serving inside a building site costs more than closing. We set the reopening date and build the calendar backwards.
La cucina a vista conviene? Is an open kitchen worth it?
It is worth it if the brigade works well under the customers' eyes and if noise, smells and heat are handled: sized extraction, glass where needed, light that shows the work at its best. Otherwise a threshold is better, a window onto the pass, which shows the gesture and protects the service.
Come riduco il personale senza peggiorare il servizio? How do I reduce staff without hurting service?
By shortening the steps: pass close to the floor, back office and washing on the way back, drinks within reach, tables grouped by zones of responsibility. A venue designed on flows is served with fewer people, and the people who work there stay longer.
Can the format be repeated in other venues?
Yes, if it is born as a system: flows, counter, standard kitchen, materials, light and graphics defined as rules, not as furniture tailored to a single venue. So the second one opens sooner, costs less and is recognisable from the first. We decide it at the start, in the brief.
Do you have a venue to open or renew?
Raccontaci il locale: ti rispondiamo entro 24 ore e fissiamo il primo incontro.Tell us about the venue: we reply within 24 hours and set up the first meeting.
